My friend Amanda recently sent me a super easy recipe for peanut butter cookies, which are a huge, huge hit with my 15 month old son Ivan. I baked some earlier today and he didn't walk, but ran across his room to the baby gate for one today which neither my husband or I have ever seen him run yet.
what you need:
1 Cup Peanut butter
1 Egg
1 cup Sugar
Cookie sheet
Hand Mixer
Something to grease the cookie sheet with. (I use coconut oil)
**Note about the peanut butter: For them to turn out best you want a peanut butter that doesn't have extra oils in it. We use Santa Cruise Organic peanut butter - I've also been told Trade Joes peanut butter works great too.
**Read the ingredients on the peanut butter before using it if soy allergic, some peanut butters do contain soy**
Preheat your oven to 375 degrees. While it's preheating mix all your ingredients together and grease your cookie sheet. Then roll the dough into small balls, I do them about an inch and flatten them out a little and place on the cookie sheet about an inch or two apart from each other. When the oven is done preheating place the cookie sheet in the oven for about 8 minutes, after pulling them out let cool on the cookie sheet for a couple minutes and then enjoy!
These are so simple to make, easy for teens and dads too, great to have the little ones help with too.
